The Importance of Minerality in Wine

Minerality is a colloidal mixture rather than a chemical solution. It impacts from how we grow the vines and what we're focusing on in the vineyard. There's an aromatic aspect, sort of like violets that you see in burgundy so often that we rarely experience in California. The downside was that that mineral aspect in California, we mostly are looking at volcanic soils, decoupos granite.
