How to Eat Beans and Lentils Safely

There are several things that can help reduce the gut irritating effects of lectins on the gut from beans and legumes. The main thing is soaking them overnight and then rinsing them out and using fresh water to cook them the next day. You can also add a little bit of sodium bicarb to reduce the gas producing effects from the sugars in the beans or you can add kombu, which is a seaweed that you don't necessarily eat but you use it during the cooking process. Now there are certain beans that are really a bit easier on the digestion like mung beans and zucchi beans are good for people who have trouble digesting regular beans.
