The Importance of Food in Inequality
I grew up with a single mother in a low income household in the north of England. I actually don't know how she managed to make that budget, you know, feed everyone and clothes and school and everything. She was not looking at a cookbook and thinking, oh, let me make this soup from scratch. She was thinking, what's quick? What can I put in the oven or the microwave? Get on with what else I need to do... And it was kind of, yeah, I think the missing piece when people think about inequality is just, oh, well, these foods are cheap.
