How to Drain the Pasta at Home
Chefs don't think about this very much, because they just have a giant cauldron of water boiling for pasta all the time. The most common way that i retain some water for the sauce is i just don't drain my posta very thoroughly. I usually drain through a little gap in the pot lid, rather than using a sieve or a colander. This saves on dirty dishes. If i'm not sure how much water i'm going to want in the final dish, i put a glass or a mea ring jug or something in the sink. Then i can drop the pasta into the sauce and pour in as much or as little of the water as it seems like it
