The Importance of Vegetables
A lot of things we think of as healthy are not so great for humans. Gluten is a lectin that causes inflammation in the human gut, leading to regression of the small intestinal villi and autoimmune disease known as celiac. We know that rice contains arsenic and heavy metals. oats are very high in phytic acid, a nutrient that chelate minerals into the human body. There are much better ways to eat carbohydrates than vegetables.
