Sarcopenia, or skinny fat, is a very strong predictor of overall morbidity and mortality as we age. Many longevity experts don't have a good amount of lean muscle mass on their body. In the vegan foods, you actually get a lot more methionine. If you are eating the whole animal, especially the tougher cuts like skirt steak from beef, you are getting plenty of collagen. The Middle Ages in Europe were using those lean cuts for the dogs because it's not a good enough food for aristocrats.
