The Hope for Korean Food
The hope for me and the thing that I think about Korean food is that it becomes part of the American food vernacular. Italian restaurants had a sort of similar wave. It never crested or broke. And so the assumption I think that we are operating on is that the Korean wave will break, that it will reach a peak and eventually decline.
