The Importance of Organic Certification in Denmark
In Denmark you can get a restaurant certification called Gold that means you between 90 and 100% organic. I think the whole idea that the public meal should be organic has been a really big driver for the organic movement in Denmark. It's made it possible for farmers to have somewhere where they could sell their products. They're the kind of opposite that you would expect to have organic certification, aren't they? Because we think of it as a luxury rather than as something important to health.
