There's a need to dissolve fats as well as carbohydrates and proteins. Fat is not soluble in water, so the body has to find a way of emulsifying it with molecules that allow them to be taken up by water. The liver does many other things, but we won't discuss all of its functions today. A final problem is that not everything can be digested, particularly there are plant substances such as cellulose that humans cannot digest.
