Pigeon Restaurant - The First Time I'm Going to Talk to Chefs

Pigeon has changed its menu every week for four years and never went back to the previous one. They've created about 500 dishes in total but have this rule where they never repeat anything. Pigeon is a five-person team running like a restaurant, which had just 20 covers. It's very expensive food, but like very, very considered. And I felt I actually created something.
