Dry Hopping in a West Coast IPA

Sean: I approach it pretty traditionally for American IPA brewer so typically most of our beers we we tend to let it fully ferment try to get as much yeast dropped out of the beer before we start any dry hopping. We've gotten into hopping dry hopping earlier in the process doing multiple dry hops during the fermentation and yeah I find it definitely with those the bio transformations that happen you just get a completely different sort of expression of the hop character when you add it during fermentation.
