Eating plants that have either a high fiber content or a high polyphenol content, they are stimulating your community of gut microbes to help your immune system. So it's really important that the plants you're eating in something like a kimchi is part of trying to get this big variety of plants in your diet and I would say aim for your 30 plants a week. Just by having a k Kimchi you're getting probably about eight or so, eight or 10 different plants in one spoonful. They're feeding the whole gut community and then you've got these microbes that are sitting on those foods that go through your intestinal system.
