Eon has never baked a cheesecake that didn't crack. So how do you make it so the cheese cake doesn't crack? Cook it in water backa, and then keep at room temperature for half an hour. Then let it finish resting in the refrigerator. It's this kind of like, slow way to really reduce the heat  and finish that cooking.
