The most common definition of an adaptogen is a compound that helps you adapt to and buffer stress. There are three main categories of adaptogens: vitamins, nutrition and behaviors. Dark leafy greens contain micronutrients that can reduce reactive oxygen species in cells as well as inflammatory cytokines. Excess heating or overcooking dark leafy vegetables can actually destroy the very nutrients they contain.
