Ike used to travel the West with my microscope in the trunk of the car and give advice to brewmasters. He said, Ike, I can give you some very practical, very simple advice that will help you a lot. That was the first really professional guidance that I got. So, but then I knew a great deal about what was happening. You know, why our beer, we only brewed once a month and we tried to keep the yeast in a milk can in the refrigerator. And it would overflow and it was full of bacteria. It's clear to me that we must use fresh yeast.
