How to Ferment Wild Greens

I'm always on the lookout for new things to learn about and most often it's not a dramatic surprise what happens. I think that any kind of foraging can certainly be incorporated into fermentation practice. You could essentially make sauerkraut out of dandelion greens if you want. There's no reason to collect 450 pounds of dandelions and fill a 55 gallon barrel with them. If you want to see how they taste better, pick a half a pound and do it in a pint sized jar or something.
