Cooking the Tomatoes Changes the Taste of the Food
If you take tomatoes and you cook them, the flavor is different. Lycopene is a phytochemical found in tomatoes that actually protects us from prostate cancer. The same would be true with fermented food. So this is just sort of something that's par for the course whenever we're talking about our food.
