The Importance of Vegetables in Your Diet
The leaves of plants are not something that plants want us to eat, and they contain defense chemicals. People are variably sensitive to these; if you're cooking the crap out of your vegetables, knock yourself out. I would challenge anyone to show me any nutrients that are deficient in my diet. That's an animal-based diet which includes enough to make it interesting.
