Any restaurant or retailer in LA that serves beef with yellow fat you see in Spain and Europe can't be that hard to find. Peeds and Barnettes is doing that old dairy cow beef and the fat on that's pretty yellow. You could just buy that retail. Texturally, it's on the chewier side, but you get that really great beefy flavor. I can see more, you know, Galician style beef starting to pop up. And maybe if we finally get that great Spanish restaurant, someone will do it.
