The Importance of a Curd Mill
A curd mill of some sort is positively necessary in order to facilitate good even stock. I prefer a self-sulting mill not only on account of the ease with which curd can be ground, but also for its superior mechanism. If milk you have in your vat is mature, or in other words slightly tending towards sour, heat it as rapidly as possible when preparing for the application of rennet. In cool extremes of the season, heat milk to 86 degrees Fahrenheit and in warm weather to 85 degrees before rennet is applied.
