The Biome of Raw Milk Cheese

All of the cheese previous to 80 years ago was like all raw milk cheese. So basically you're saying it's like a false safety. You can still have food contamination and pasteurized cheese. There are experiments that have been done where somebody will take some milk that's straight out of a clean environment from an animal and put it on the window sill for five days. That has essentially no immune system to fight off any of the bad stuff. Whereas the raw milk has had its own immunity system to fight all of the stuff off. And so by doing what we're supposed to be doing, we're actually potentially creating an even worse environment for these things.
