What's the Major Style of Burgundy?
The major style of red burgundy making before these hotter times was to give the grapes a good, cool, rather than cold, pre-maceration for five days. People are moving towards something which is just a little bit gentler and perhaps more graceful. There's slight move away from too much new oak. The meetings that go on each year when lots of producers get together where all wines are tasted blind.
