The client can find a cheaper option or replacement like a reasonable substitute for less money. So if you just say oh normally I would charge whatever $10,000 of hours for this engagement so I'm going to charge them 50 because Stark says value pricing you know increase my fees. There are fewer and fewer reasonable alternatives the client and clients eventually have nothing to compare you to except for your own options. And there if there's no meaningful difference between the two of you they're going to pick the cheaper one.
