I can judge a restaurant's going to do good. Sometimes you just know what the rents are and you know, you can look. And you can pretty much judge that too. What you all said to consider is the takeaway delivery business which is also hard to figure out. But not every restaurant, even the busiest restaurants, have a hard time filling tables from five to seven. People lead you earlier, but I think that's going to revert back at least in New York.
After Chris and Dave lead you through the dreaded chain reaction of what occurs in a restaurant kitchen when a table is five minutes late to their reservation, they do their very first Debate Club on whether dining should require a special license on the diner's part. Other topics include kids as the death of punctuality, burying “friends of Dave” on the waitlist at Momofuku Ko, and what it takes to be a respectful diner.
Hosts: Dave Chang and Chris Ying
