I was wondering if there were any ferments that really surprised you in some way because of the flavor profile. I'd be fascinated to see a study looking at how the microbial community of the ferment shifts as a result of the genetic modification. Fermentation creates strong flavors and sometimes those flavors are much more acceptable if we mix a small amount into something where it adds this little, this subtle hint of flavor complexity.
