Caterers Have the War Stories

Every caterer has the war stories and they usually involve a sprinkler system. One really experienced executive catering chef keeps a sprinkler head on his desk to remind him of the time. I think what we came away with being amazed is how often it goes right. There's no room for error. As one of the caterers we spoke to said, you're only as good as your last souffle.
