Chinese Bakery Almond Cookies - My Favorite Recipe in the Book

I wanted the cookie to be kind of like thin, crispy edges with a soft chewy center. The head note is like an entire page because I just wrote about my grandpa in there. And they are also one of the easiest recipes in the book. So it's ironic that the easiest recipe in the book, I tested it more than anything.
