The Hyper-Processing Hypothesis
In children and in most of us it's the ultra-processed food that's driving this very high level of obesity. So could we hyper-process our way out of the problem? I think those arguments are spurious and they won't work, but they are very persuasive for many people. If food is soft, not simply as an accident of it all being extruded and macerated, it's soft because that's what we like - chewy bread doesn't sell. And if you make it wet, it won't stay around and you reduce the energy density,. It won't be as addictive.
