What Made You a Good Cook?

I was interested by everything. I had a good sense of what was excellence, even if I never lived in a fancy world with fine dining and didn't know what Truffle was or Fwagra. The word that comes to mind seems to be curiosity. Were you just an unbelievably curious kid? Curiosity and passion to learn, I would say. It's funny we were talking with Michael who's worked with you for 22 years now. Chef is always thinking about the future. He wants to get better. Every meal he cooks, he wants it to be his best.
