When studying extended habituation to a low carbohydrate high fat diet, we see a shift of the crossover set point in favor of greater fat oxidation even at much higher intensities than 85% VO2 max. So why is that important? If you can shift the crossover point further along the intensity spectrum, you can command more energy that's demanded from fat than what we were thinking otherwise. And so in theory, giving you more available glycogen at the end of the event or a workout with less exogenous fuel needs.
