When you run below your rubic threshold, so truly easy, you are maximizing the ability of your body to incur cellular level adaptations. That's really important for long distance athletes because glacagen is such an important substrait in energy production. And then this is side of energy metablis necessary, but in some ways also, like going easy is easier on your body, and you're less likely to get injured.
