The Evolution of French Cheese

In France, soft ripened peasant cheeses began to develop. This was basically using the same cheese making methods that had been common in the Mediterranean but in the cooler climate of Northern France. French cheesemakers were coming up with bloomy rind cheeses, lactic cheeses and washed rIND cheeses. These were all things that were having bacterial activity going on in the inside of the cheese which created a mold-like texture.
