Dr walter willett is a professor at the harvard chan school of public health. He says that carbs are not to blame for our weight gain, it's refined starch and sugar. Willett: Eating fast digesting carbs like posta, white bread,. twinkies, cereals, sugary drinks can make you feel great for maybe an hour or two. And then your blood sugar goes way down. You're hungry again, and you're reaching for another fast acting fuel source. It's like throwing paper on a fire. Eating fruits and vegetables isn't as bad because they aren't all carbs.
