Pork is really the dominant meat in China still and has been for a long time. Meat consumption per capita in China lags most of the western countries, including the US. One area that could change that is potentially if beef comes up with some great innovation or really hops on that protein trend. Bloomberg’s Matt Townsend and Leslie Patton join this episode to explain how poultry came to dominate the American diet. And historian Emelyn Rude shares what the past can tell us about where the industry goes from here.
