How to Make Scrambled Eggs
The BASK method is to scramble the eggs in a couple tablespoons of olive oil. The hotter your pan is when you put your eggs in, the fluffier they end up because the moisture in those eggs turns into steam and it expands and puffs them up. I use a trick that our mutual friend Charles Kelsey, who owns Cutty's in Brookline, he had a French omelette recipe there where he cut up tiny little cubes of butter. It works whether you like your eggs sort of harder cooked or softer cooked.
