They contain high levels of salt, oil and sugar and other things like emulsifiers and additives which are hyper palatable so we keep seeking those. Having a lot of these sorts of foods in our diet does not only affects our gut microbiome but it also can affect our palate. The natural sweetness of a carrot or the crunch of an apple might not quite hit the spot in the same way.
