Many restaurants, because of short staffing, or just because of the way it has always been, the chef is the expediter. I actually feel that, if you can, a restaurant should just hire to be an expediter. Back of the house being the cooking operations could be potentially automated. But also, it's better for somebody to help out, to be a tornaut to be somebody that can help oversea y.
