One table that is late can actually really throw, not just a monkey wrench. They can just break down service all together in a lot of different ways. When you have a full book, this is one of the worst feelings in the world. Just that minute at the beginning of the night adds up. So you really would rather not have tables early if you can't like sit them,. You want to at least get one turn done right.
