Liver is a good source of minerals. It's one of the ones that we used to get that we don't anymore. Copper is vastly underrepresented too. If you eat about a whole bar of dark chocolate every day, which I do actually, I like chocolate, it does contain a substantial amount of copper. But dark chocolate tends to have histamine and it can also have phytic acid.
