The plan is to use pre frozen russet burbank potatoes. They're a little lower in water content than other potato varieties. The fries i tasted at 13, the ones at blew my mind. Three batches. One batch fried twice in vegetable oils, just like the fries you get in mac donald's. Second batch, a mix, fried once in vegetable oil, then a second time in beef tallow. And the third batch, old school, fried both times in beeftallow.
