The Effects of Pyruvate on Metabolism
Pyruvate acts as the emergency oxidizing agents for NADH through an enzyme called lactate dehydrogenase. All people with diabetes, insulin resistance and cardiovascular disease have higher than normal levels of lactic acid in their blood. So anything that we can do to either limit the supply of fat or increase the relative abundance of glucose relative to the fat should have therapeutic effects.
