How to Water Your Wine to Make It Better

The problem in California with Sanjay is that if you're making a red wine and you pull the juice off, then it's going to be really high alcohol. At lower alcohol, the wines actually become denser and more highly extracted. The aromatics, esters, terpenes, thiols in both red and white wines are what we call a polar. So they hate water.
