How to Ferment Pinonoir Grapes

It's all so much easier to run a ferment when you've destemmed the grapes. Because we have destemesa now that do the job for us. So it's quite easy to to separate the grapes from the from the bunches m and it means that you get a more, a more pure, pure fruited character in the wine. And with, particularly with pinonoir, a, really love to see that pure am cherry or berry fruit, a some spice coming through.
