Italian Restaurants - Is Chile Really Important?

Kashmiri is an important spice. Chile also adds a dimension, right? It's not always about the spice. Like Kashmiri, Chile is such an interesting ingredient that it doesn't add that much heat. But it adds loads of flavour. So I brought all these ingredients to the restaurant and then we were like four hours to service time - which is horrible by the way. When you're planning for a service, you need to start at least 24 to even 48 hours in advance. And I of course didn't know, you know, much at the time. The second problem is Italian are really really strict about their food. Yes. Next thing, Indian food in general.
