The Importance of Processed Foods
I think there is a sort of national understanding that people have a personal responsibility for what they eat. And at the moment we're surrounded by food that's extremely hard to stop eating, and much of it is sold to us as healthy. So we have this classification now of ultra-processed food, which now makes up more than half of our diet. It's about 60% of what we eat. There's a long formal scientific definition, but it boils down to food that's wrapped in plastic and contains an ingredient you don't find in your kitchen.
