The Difference Between Coffee and Wine Fermentation
fermentation is a very powerful part of the style, of dictating the style of what the wine is going to be like. Traditionally, it is seen as an inert step to just remove the seed from its mucilage and hurry up and get the seed to dry. Most producers are constantly working to reduce the fermentation to be as short as possible. And so more recently, the trend has been back towards a controlled fermentation where we can increase the flavor but not have the drawbacks of letting it spoil.
