The Food Matrix Effect on Cardiovascular Risk

Unsaturated fatty acids tend to confer the lowest cardiovascular risk compared with saturated fats. Trans fats that have been banned from the food supply are the most harmful. The calcium content seems to be in particular one of the reasons why there could be this difference in effect between dairy and other foods.
