With seasonality our assortment turns over almost 8% a month. A lot of our coffees are only even live for like six weeks because sometimes some of these roasters will only buy like 200 pounds of a particular green coffee. And then how do you taste those things subjectively ascribe objective information to them and then use replicable systems at very, very high frequency? "The most important question we always ask ourselves with any business process is will this next action delight the customer enough that they will do this with us again?" he says.
