How Many Restaurants Can You Operate?
There's a very low cap on how many restaurants an operator can operate. The reason we've moved to two or three is generally customer driven. We look at leadership capacity, because one of the things we learned early on was some one could do a fantastic job in one and not do a fantastic jobs in two. And again, we wouldn't even criticise those people,. If you give those two restaurants there, they're going to struggle, if not fail.
