The Differences in Bitterness in Beer

10, even 15 bittering units isn't enough for at least my palette. Right. To distinguish a whole lot. It makes me wonder how, how really sensitive to the differences. But then also that the bitterness, the measured bitterness isn't the whole story in the perceived bitterness. And just like you say, if we made a German wheat beer that's supposed to be 13 or 15 IBUs, but we made 40 IBUs, it would taste very bitter.
